Vanilla Cupcakes

Ingredients:
  • 2 cups baking flour
  • 1 1/2 cups sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup softened butter
  • 1 cup 2% milk
  • 1 1/2 tsp vanilla
  • 4 egg whites
  • Preparation:
    1. Preheat the oven to 350ºF. Line cupcake pans with paper liners.
    2. Mix flour, sugar, baking powder and salt in medium bowl. Combine butter, milk and vanilla in a separate large bowl until well creamed. Add flour mixture to wet ingredients until thoroughly combined. Mix at low speed for 2 minutes. Scrape bowl. Add egg whites and mix at high speed until fluffy about 2 minutes.
    3. Fill liners with batter 1/2 full. Do not overfill.
    4. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean.
    5. Cool 10 minutes in pans, remove from pans and place on wire racks to cool completely.
    6. Frost and decorate Vanilla Cupcakes as desired.
