Tomato-Basil Sauce

Ingredients:
  • 2-3 shallots or scallions (minced)
  • 2 Tbsp garlic (minced)
  • 2 cups tomatoes (peeled, seeded, chopped)
  • 1/3 cup dry white wine or 3 Tbsp dry vermouth
  • 2 Tbsp capers
  • 2 Tbsp basil or parsley (minced)
  • Preparation:
    1. 1. Sauté shallot (1 min)
    2. 2. Stir in garlic and tomatoes. Cook over high heat until lumpy puree (2 min).
    3. 3. Add wine, capers. Boil until thicken (2 min).
    4. 4. Stir in basil or parsley.
