Super Simple, but Oh so Tasty Tomato Soup

Ingredients:
  • 1/2 cup onion, finely chopped
  • 1 tablespoon butter
  • 1 (14 1/2 ounce) can petite diced tomatoes with garlic and olive oil (I use Del Monte brand, others would work)
  • 1 (10 3/4 ounce) can condensed tomato soup, undiluted
  • 1 cup milk
  • Preparation:
    1. In a saucepan, sauté onion in butter until tender.
    2. Stir in seasoned tomatoes (with juice), soup, and milk.
    3. With a wand blender, whirl soup until desired consistency.
    4. Bring almost to a boil.
    5. Reduce heat; cover and simmer for 10 to 15 minutes.
    6. Yields 4 servings.
