Stir-fried Asian Greens with Tofu

Ingredients:
  • Ingredients
  • • 2 teaspoons peanut oil
  • • 2cm piece fresh ginger (10g), cut into slivers 1 clove garlic, crushed
  • • 100g gai lan, chopped coarsely
  • • 100g broccolini, chopped coarsely
  • • 150g baby buk choy, chopped coarsely
  • • 100g firm tofu, chopped coarsely
  • • 1 tablespoon water
  • • 2 teaspoons tamari
  • • 2 teaspoons coarsely chopped roasted peanuts
  • Preparation:
    1. • Serving size: Serves 1
    2. • Cooking time: Less than 30 minutes
    3. Method
    4. Heat oil in wok; stir-fry ginger and garlic until fragrant. Add vegetables, tofu, the water and tamari; stir-fry until greens are just tender.
    5. Serve stir-fry sprinkled with nuts.
