Sherry-Cream Sauce

Ingredients:
  • 2 shallot or scallion (minced)
  • 8 oz mushrooms (sliced)
  • 1/3 cup sherry (cream or armontillado)
  • ½ cup chicken stock (low sodium)
  • ¾ cup heavy cream
  • 2 Tbsp parsley (minced)
  • Pinch of mace
  • 1 wedge lemon
  • Preparation:
    1. 1. Sauté shallot (1 min).
    2. 2. Sauté mushroom until limp (2-3 min).
    3. 3. Add sherry and deglaze pan. Boil until evaporated.
    4. 4. Add stock and cream. Boil to reduce to 1/3 cup (5-6 min).
    5. 5. Stir in parsley, mace, lemon.
