Shelly's Taco Bites



  • cup of Leftover Taco Salad Meat Mixture (click on link for recipe)
  • 1/2 cup Mexican Blend Cheese, shredded (Monterrey Jack, Jalapeno Jack, Colby or a combo)
  • 5 Eggs, beaten
  • 1/2 teaspoon Kosher Salt
  • a few twists of Black Pepper
  • Preparation:
    1. Mix all ingredients together.
    2. Spoon into lightly greased (Pam works great) mini muffin tins.
    3. Bake for 30 minutes at 350. Makes 24.
