SOUR CREAM GREEN ENCHILADAS by Betty Mincer Nybakken

Ingredients:
  • 1 can boned chicken
  • 1 - 8oz sour cream
  • 1 can cream chicken soup
  • 1 pkg. large flour tortillas
  • 1 small can green chills
  • 1/3 cup onions
  • 1/2 cup pet milk
  • 1 lb. Colby & Monterey Cheese Mixture
  • Preparation:
    1. Mix all except tortillas and cheese.
    2. Fry two to three tortillas for a few minutes until limber.
    3. Layer in casserole.
    4. Place mixture and cheese in layers, top with cheese.
    5. Put in oven for 45 min. at 300 degrees.
    6. Fry remaining flour tortillas until brown and crispy.
    7. Serve Sour Cream green enchiladas on top of crispy flour tortilla.
    8. Notes from Betty Mincer Nybakken:
    9. When the whole family comes over.. I triple the recipe and do not put any torillas in layering.. it is easier to serve and my family likes the torillas to be crispy! You can make it up early.. even the day ahead .. or on pop in oven on Sunday’s after church. It will bake while you make up your green salad and set table. Enjoy!!
