Red scalloped potatoes




  • 8 red potatoes; partially peeled & cut into 1/8 inch slices
  • 3 T. butter
  • 1 onion; chopped
  • 2 cloves garlic; minced
  • 1 (10.75 oz.) can cream of broccoli soup
  • 1 (10.75 oz.) can cream of celery soup
  • 1 c. milk
  • salt & pepper
  • 4 c. shredded cheddar cheese
  • Preparation:
    1. 1. Preheat oven to 350F. Butter a large baking dish.
    2. 2. Place the sliced potatoes in the baking dish.
    3. 3. Melt butter in a bot over medium-high heat. Saute the onions and garlic until translucent, 7-10 minutes. Stir in the broccoli soup, celery soup, milk, salt, pepper and half of the cheddar cheese; cook until the cheese has melted. Pour the mixture over potatoes; top with remaining cheddar cheese. Cover the dish with foil.
    4. 4. Bake for 45 minutes. Remove the foil and cook until the cheese begins to brown, about 10 minutes longer.
