Quinoa Cheese Puffs

Ingredients:
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1-3/4 cup milk
  • 1 cup cornmeal
  • 1 cup quinoa meal
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1/4 tsp black pepper
  • 1/2 tsp basil
  • 1 cup grated sharp cheddar cheese
  • Preparation:
    1. Preheat oven to 425.
    2. Prepare quinoa meal by grinding raw quinoa grain in blender or use quinoa flour.
    3. Blend milk, eggs & butter.
    4. Mix dry ingredients together and add to liquid. Fold in grated cheese.
    5. Bake in greased muffin tin 10-15 minutes, until golden.
    6. Makes 24 puffs.
