Potatoes--Balsamic Roasted Potatoes

Ingredients:
  • 2# fingerling potatoes, halved
  • 1 1/2 Tbsp. EVO
  • 2 Tbsp. balsamic vinegar
  • 2 tsp. chopped fresh thyme
  • 1/2 tsp. coarse sea salt
  • 1/4 tsp. black pepper
  • 2 tsp. chopped fresh chives
  • Preparation:
    1. Oven: 400 degrees
    2. In a large bowl, toss the potatoes with olive oil, balsamic vinegar, thyme, salt and pepper. Spread the potatoes onto baking sheet.
    3. 400/ 30-40 minutes, stirring occasionally.
    4. Garnish with chives before serving.
