Pork Chop and Applesauce

Ingredients:
  • • 1 small Fuji apple, peeled, cored, and diced
  • • 1/4 tsp. ground cinnamon
  • • 1 Tbsp. unsalted butter
  • • 1/4 cup diced yellow onion
  • • 1 garlic clove, minced
  • • 1 tsp. fresh or dried sage
  • • 1/4 tsp. kosher salt
  • • 1/4 tsp. pepper
  • • 1 2- to 3-oz. boneless pork cutlet, diced
  • • Sour cream, for serving
  • Preparation:
    1. 1. In a large mug, combine apples and cinnamon with enough water to cover. Cover loosely with plastic wrap and microwave for 5 to 8 minutes until tender. Drain.
    2. 2. In a second large mug, combine butter, onion, garlic, sage, salt, pepper and pork and microwave for 2 to 3 minutes until vegetables are tender and pork is cooked through. Add drained apples and microwave for another 30 to 60 seconds to warm through. Serve immediately with a dollop of sour cream.
