Perfect Fried Eggs (Cook Illustrated Jul 2013)

Ingredients:
  • 2 large eggs
  • salt/pepper
  • 2 tsp vegetable oil
  • 2 tsp butter
  • optional (cheese)
  • Preparation:
    1. 1. Crack 2 eggs into small bowl and season with salt/pepper
    2. 2. Heat oil in nonstick skillet over medium-high
    3. 3. Add butter to pan when oil is shimmering
    4. 4. Pour eggs into pan and cook COVERED for 1 MINUTE
    5. (optional can sprinkle cheese on top of egg)
    6. 5. Take pan off heat and let stand, COVERED, for 30 seconds, 1 min, or 2 min (for runny to medium yolk)
