Peanut Butter Cup Bars ***

  • 2 cups finely crushed peanut butter sandwich cookies
  • 1/2 cup butter, melted
  • 2 cups powdered sugar
  • 1-1/3 cups peanut butter
  • 1/2 cup butter, melted
  • 2 cups semisweet chocolate chips
  • 1/2 cup milk chocolate chips
  • 1/2 cup peanut butter
  • Preparation:
    1. Line a 9" x 13" pan with foil and set aside. In medium bowl, combine crushed cookies and 1/2 cup melted butter; mix well. Pat into prepared pan and set aside.
    2. In another medium bowl, combine powdered sugar, 1-1/3 cups peanut butter and 1/2 cup melted butter; mix well until smooth. Drop by spoonfuls over crust and carefully spread with the back of a spoon to cover. Chill for 30 minutes.
    3. In large bowl, combine semisweet chocolate chips, milk chocolate chips, and 1/2 cup peanut butter. Microwave on full power for 1 minute; remove and stir. Continue microwaving for 1 minute intervals, stirring after each interval, until chocolate is melted and mixture is smooth. Pour over peanut butter filling. Cover and chill Peanut Butter Cup Bars in the fridge until firm, then cut into small squares. Store the squares at room temperature, or the chocolate topping on the Peanut Butter Cup Bars will get too hard to cut.
