One Hour French Bread




  • 1 1/2 cups warm water
  • 1 tablespoon honey or sugar
  • 1 1/2 teaspoons salt
  • 1 1/2 tablespoons active dry yeast
  • 3 - 4 cups flour (white, whole wheat, or both)
  • cornmeal
  • Preparation:
    1. -Preheat oven 450º.
    2. -Combine water, salt, honey or sugar, and yeast. Let sit 5 to 10 minutes, until foamy.
    3. -Add flour, stirring with a wooden spoon, until dough is no longer sticky. I like to add three cups flour, then slowly add more while working the dough with the dough hook. (I have a handheld mixer that came with dough hooks and I can't live without it.)
    4. -Knead gently just a little to bring the dough together.
    5. -Roll dough into a 12 - 14 loaf, or you can make two long, skinny baguettes. -Cover a baking sheet with a sil-pat or parchment paper, and dust with cornmeal.
    6. -Place dough on the baking sheet, cover with a lightly flowered towel, and let sit 20 minutes.
    7. -Make diagonal slits, 1/2? deep, along the top.
    8. -Bake 20 minutes.
