Mashed Potatoes

Ingredients:
  • 2 pounds small red potatoes, quartered
  • 1/2 cup butter
  • 1/2 cup milk
  • 1/4 cup sour cream
  • salt and pepper to taste
  • rosemary
  • tarragon
  • 1/2 medium onion - diced
  • 3 garlic cloves - minced
  • Preparation:
    1. Bring a large pot of lightly salted water to a boil. Add potatoes, and cook until tender but still firm, about 10 minutes. Drain, and place in a large bowl.
    2. Saute onions and garlic until soft in 1 Tbsp butter with tarragon and rosemary added.
    3. Combine potatoes with butter, milk, sour cream, salt/pepper, and onion/garlic mixture. Mash together until smooth and creamy.
