Lemon-Caper Sauce

Ingredients:
  • 1 shallot or scallion (minced)
  • 1 cup chicken stock (low sodium)
  • 3 Tbsp lemon juice
  • 2 Tbsp capers
  • 3 Tbsp butter
  • Preparation:
    1. 1. Sauté shallot (1 min).
    2. 2. Add stock and deglaze pan.
    3. 3. Add lemon juice and capers. Boil to reduce to 1/3 cup (3-4 min).
    4. 4. Swirl in butter off heat.
