Fresh Tomato Sauce

Ingredients:
  • 1.5 lbs ripe plum tomatoes
  • 3 Tbsp olive oil
  • 2 tsp garlic (minced)
  • 2 tsp dried basil
  • 3 Tbsp Parmesan cheese
  • Preparation:
    1. 1. Core, peel, and de-seed tomatoes. (cut X at bottom of tomatoes, drop in boiling water for 10-15 sec, peel off skin, cut and squeeze out ooze).
    2. 2. Cook garlic in oil (30 sec)
    3. 3. Add tomatoes. Crush and stir over medium heat (3 min).
    4. 4. Add cheese and basil.
