  • 500 gms Hilsa or Ilish
  • • 3 tablespoon mustard seeds soaked in water
  • • 4- 8 green chillies
  • • 1 teaspoon turmeric powder
  • • 1 teaspoon sugar
  • • Salt to taste
  • • 1 tablespoon mustard oil (Do not substitute mustard oil with any other oil)
  • • Whole 8-10 green chillies to put inside the parcel (optional)
  • • 1 complete size banana leaf (ideally a tender one which would be cut into pieces to wrap the fish pieces
  • • Threads for wrapping the fish parcels
  • Marination:
  • • 3 Tablespoon mustard seeds grinded to powder
  • • 4- 8 Green Chillies, salt, and turmeric powder to make the paste
  • • Mix the spice paste together
  • • Smear the paste on both sides of the fish fillets
  • • Place the fillet on a nicely cut piece of banana leaf, apply more spice paste and top it with a teaspoon of mustard oil
  • • Fold the leaf from four sides and tie it thread
  • • Place the fish parcel on the steamer
  • Preparation:
    1. Steamer:
    2. • At the base of a bamboo steamer, put a sheet of butter paper
    3. • Clean and cut the banana leaf without the stem so as to fold the fish within and make parcels
    4. • Place a thick bottomed vessel on the oven and bring it to boil
    5. • Place a wire mesh on top of it to create the base for the steamer
    6. • Put the lid of the bamboo steamer once the fish parcels are kept inside
    7. • Steam for 10-15 mins, till the banana leaf changes its colour
    8. • Serve it with steamed rice
    9. Instructions:
    10. • Wash and dry the fish fillets, cut into 4 to 5 pieces, keep aside
    11. • In a blender add mustard seeds, greens chillies and a pinch of salt
    12. • Make it a smooth paste by adding little water from time to time
    13. • Add a teaspoon of sugar and turmeric powder to it (sugar takes away some of the bitterness of mustard)
    14. • Add salt as required and finally make a smooth marinade
    15. • Once the marination is done, pour mustard oil to it and mix it well
    16. • Dip the fish pieces into the marinade and rub them so that it absorbs the goodness of the marinade
    17. • Leave the fish for 30 minutes in room temperature or 2 hours in refrigerator
    18. • Now cut the banana leaf into small parcel size squares
    19. • Take the banana leaf in a platter with the glossy side up, rub little mustard oil to it
    20. • Place a fish fillet at the center and add some more marinade on it
    21. • Place one green chilli on top of it
    22. • Fold the leaf from each side and make it a square parcel
    23. • Wrap it with the thread so that it does not open while cooking
    24. • Wrap rest of the fish fillets in the same fashion and make a parcel for each of them
    25. • Now heat water in a steamer or any thick bottomed vessel
    26. • Add the parcels into the steaming basket
    27. • Steam the parcels for 10-15 minutes (depending on the thickness of the fish)
    28. • Remove from steamer, discard the threads from the parcels
    29. • Serve piping hot with steamed rice
