Crispy Dijon Chicken




  • 4 boneless, skinless chicken breasts
  • 2 T. olive oil
  • Dijon Mustard
  • ¼ c. seasoned dry bread crumbs
  • salt & pepper
  • Preparation:
    1. 1. Place chicken between sheets of plastic wrap. Pound each chicken breast with the flat side of a mallet to an even thickness, then brush with Dijon mustard. Sprinkle evenly with salt, pepper and bread crumbs to coat.
    2. 2. Heat olive oil in skillet over medium heat. Add chicken. Cook 4 minutes per side or until cooked through.
