Chickpea Salad

Ingredients:
  • 1/4 cup lemon juice
  • 3 Tbsp. olive oil
  • 1/4 cup chopped fresh basil
  • 2 Tbsp. chopped fresh parsley
  • 1/2 tsp kosher salt
  • 2 garlic cloves, minced
  • 2 (19-oz) cans chickpeas (garbanzo beans) rinsed and drained
  • 2 cups grape tomatoes
  • 1 diced yellow pepper
  • 1 diced orange pepper
  • 1/2 english cucumber, halved and sliced thin
  • Preparation:
    1. In a medium bowl, whisk together lemon juice, olive oil, basil, parsley, salt, and garlic.
    2. In a large bowl, combine chickpeas, tomatoes, bell peppers and cucumbers.
    3. Toss with dressing and chill.
