Chicken satay skewers

Ingredients:
  • 4 chicken breasts, chunks
  • 1 Tbsp natural peanut butter
  • 2 Tbsp low sodium tamari
  • 1 clove garlic, minced
  • 1 tsp sambal oelek
  • Juice of 1 lemon (approx 3 Tbsp)
  • 8 mushrooms
  • 1/2 of a red onion
  • 1 red pepper
  • 1 green pepper
  • 1 zucchini
  • Preparation:
    1. 4 metal or wooden skewers.
    2. Combine peanut butter through lemon juice and mix well.
    3. Add chicken to marinade and let sit at least 1 hour. Overnight is ideal.
    4. Heat BBQ.
    5. Thread chicken and vegetables, alternating on skewers.
    6. Cook 4 minutes, turn over and cook another 4 minutes (or until done).
    7. 1 skewer: Cal 183; Pro 33.6; Carb 3.9; Fat 3.7
