Chicken, Rice, & Broccoli Casserole

Ingredients:
  • • 4 half chicken breasts, salted and peppered, fried, and cut into 1-inch pieces (or you can always use about 3-4 cups of other chopped or shredded chicken)
  • • 2 cans cream of chicken soup
  • • 1 cup of mayonnaise
  • • 1 teaspoon curry powder
  • • 2 pkg. frozen broccoli florettes, defrosted
  • • 2 cups COOKED rice
  • • ½ cup any white wine (left over)
  • • ½ cups sliced or slivered almonds
  • • ½ pkg won-ton skins cut into ¼” x1 ½” strips and deep fried to a light golden brown
  • Preparation:
    1. Preheat oven to 375 degrees Fahrenheit.
    2. In a medium bowl, combine the soup, mayonnaise, wine, and curry.
    3. Mix 2 cups cooked rice with 1 cup of the above mixture.
    4. Evenly place the rice mixture in a 2-quart casserole dish or 9"x13" pan.
    5. Evenly place broccoli over the rice.
    6. Evenly place chicken on top of broccoli.
    7. Spread remaining sauce mixture on top of chicken.
    8. Bake covered at 375 degrees for 40-50 minutes or until center bubbles.
    9. Remove cover, and add top with fried won-tons and almonds.
    10. Return to oven and bake until top is browned (about 5-10 minutes).
    11. Serves 4-6
    12. ***Can be made the day before, adjust baking time if baked cold.
