Basic Veloute Sauce

Ingredients:
  • 1.5 cup chicken stock
  • 2 Tbsp butter
  • 3 Tbsp flour
  • 1/3 cup heavy cream (or light)
  • Preparation:
    1. 1. Heat stock until almost boiling
    2. 2. Melt butter. Wisk flour into butter over medium heat (2 min).
    3. 3. Add hot stock slowly while stirring. Bring to a boil, then simmer (2-3 min).
    4. 4. Add cream at the end
