Banana Bread

Ingredients:
  • 2 c all all purpose flour or all purpose gluten free flour
  • 1/2 C apple sauce
  • 4 bananas
  • 1/2 c. brown sugar
  • 1 tsp. cinn.
  • 1/4 tsp. nutmeg
  • 1/4 c flax seed
  • 1/4 c walnuts
  • 1/4t salt
  • 1t baking soda
  • 1/2C vegan butter
  • Preparation:
    1. 1. In a large bowl, combine dry ingredients.
    2. 2. In a separate bowl, cream together butter and brown sugar. Stir in applesauce and mashed bananas until well blended.
    3. 3. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan (9x5).
    4. 4. Bake in preheated (350) oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
