Thai Red Curry

Ingredients:
2 cups uncooked brown rice
1 quart water

1/4 - 1/2 cup red curry paste
2 (13.5 ounce) cans coconut milk (1 light, 1 regular)
1-2 tsp Red Pepper
3 tbsp soy sauce
1/4 cup brown sugar (can add more to taste)
1 can sliced bamboo shoots, drained
1 red bell pepper, julienned
1/2 cup sugar peas
1/2 cup bok choy
1 small onion, chopped
1 cup fresh pineapple
1-2 jalapenos to taste
3-5 thai chillis, green
Fresh Basil handful (chopped)
Fresh Coriander or Cilantro (chopped)
Garlic : 2 cloves (crushed)
Lemon grass puree 2 tbsp
Fresh ginger : 2 tsp (grated)
kaffir lime leaves

1 tsp umboshi plum paste
cayanne
Preparation:
First step: Sautee the curry paste in oil to activates the spices and flavor in the paste.
