Taco Lettuce Wraps

Ingredients:
Taco Meat
1/2 C Raw Almonds
1/2 C Raw Walnuts
1/3 C Sun Dried Tomatoes loosely packed
1/2 Tsp Chili Powder
1/4 Tsp Cayenne Powder (or to taste)
2 to 4 Tbsp Olive Oil
1 Tsp Salt
dash oregano
2 tsp garlic

Vegan Sour Cream
1/4 C Just Mayo, Soy Free Veganaise, or homemade
1-2 T Crystal Hot Sauce
Preparation:
Put all taco meat ingredients into a food processor and blend until desired consistency is achieved (careful not to over blend). Taste and adjust seasoning.

Put a spoon full of the mixture into a romaine or cabbage leaf, top as you'd like. I like thinly chopped purple cabbage, black olives, dash of Crystal hot sauce and my take on a vegan sour cream. I also finish with a sprinkle of cumin, chili and salt.
